Lumpfish Roe

The lumpfish (Cyclopterus lumpus) lives off the coast of West Greenland, where we catch it and process its fresh and delicate roe. For most of the year, the lumpfish is pelagic, but in spring it moves into the shallow waters of West Greenland to prepare for spawning.

Fighting bycatch

Lumpfish are caught using gillnets set in the coastal zone. Polar Seafood’s lumpfish fishery obtained MSC certification in August 2015 and Polar Seafood has actively participated in a targeted research project aimed at reducing bycatch levels in the fishery.

Firm and crisp texture

Fresh lumpfish roe can vary slightly in colour depending on the age of the fish and the time of capture, but it is typically pink or orange. The roe measures 1–2 mm in diameter and has a firm, crisp texture that pops gently in the mouth when eaten. It has a mildly salted and slightly sweet flavour that pairs well with many starters.
