Food safety and quality encompass a range of procedures, all aimed at ensuring that Polar Seafood’s products are of the highest quality and free from pathogenic bacteria or substances.
HACCP as the foundation of our procedures
Our procedures cover various processes, from the handling of food on board our trawlers to storage in our cold stores. Our self-monitoring systems and quality manuals are therefore based on HACCP principles, enabling us to systematically identify, assess and strengthen areas that impact food safety. Through this, we also ensure that all legal requirements are integrated into our self-monitoring and complied with in practice.
In addition, we maintain close dialogue with the authorities regarding both food safety and export. This includes audits carried out by the authorities on board our trawlers, at the factories, cold stores and at the office in Vodskov.
Continuous processes grounded in reality
Food safety and quality cover everything from temperature measurements in freezers and cold stores, maintenance of equipment, cleaning and hygiene to waste management. All of this is continuously monitored and documented, and control samples are sent to both internal and external laboratories for testing for pathogenic bacteria and substances.
Each trawler and location follows a quality manual specifically designed for its work area and equipment, making it possible to act proactively while meeting both internal requirements and those set by the Danish Veterinary and Food Administration.
Furthermore, there is constant dialogue with employees on our trawlers, in the factories and in the cold store, so improvements and solutions are based on their daily work and challenges. This ensures that quality and food safety are continuously evolving.
Product quality control
It is important to us that our products reflect our values and goals of high quality and transparency, which is why our sales teams own quality control is also a part of our process.
The sales team inspects random samples of Polar Seafood’s fish and shellfish several times a week, documenting aspects such as appearance, weight and other parameters to ensure they meet our standards. In this way, we also ensure constructive dialogue between our sales team, trawlers and factories, so the entire value chain works towards the same high level of quality.
